Episode 8 – Key Lime Tart

This fresh, homemade tart will delight your taste-buds! We make this tart with fresh mangos, homemade graham crackers (See Episode 7), and other fresh ingredients. This tart is a little sweeter than key lime pie and a little less tart-tasting, but has a wonderful mango flavor. It’s sure to please your guests.

True homemade key lime pies are never green in color. The yellow color is mostly from the egg yolks in the recipe, but you’ll also notice that the juice is also a light yellow color. No Green!

Ingredients:

Tart:
• 1 ½ cups (225g) graham crackers
• 2 tablespoons (30ml) granulated sugar
• 5 tablespoons (75ml) unsalted butter, melted
• 2 cups (500ml) pureed mango
• 1 - 14 ounce (300ml) can of sweetened condensed milk
• 1 teaspoon (5ml) Key lime zest
• 6 tablespoons (90ml) Nellie & Joes or fresh squeezed Key lime juice
• 4 large egg yolks
• ¼ (1.5g) teaspoon salt

Whipped Cream Topping:
• 1 cup (250ml) heavy cream
• 1 tablespoon (6g) confectioners’ sugar
• 1 tablespoon (15ml) vanilla extract
